Serves 2
Ingredients:
- 4 cups baby spinach
- 1.5 cups cooked orzo
- 2 cups cooked beluga lentils
- 1 avocado diced
- 1 small zucchini sliced
- 200g cherry tomato diced
- 2 tbsp diced walnuts
- salt & pepper to taste
Dressing:
- 1/2 cup basil
- 1 tbsp olive oil
- 1 lemon juiced
- 1 garlic clove
- 1/8 cup walnut
Instructions:
1. On a pan on medium heat, grill the zucchini for 2 to 3 minutes on each side.
2. Blend all the dressing ingredients together.
3. Combine the spinach, orzo, lentils, avocado, tomatoes, zucchini walnut, salt & pepper, and dressing in a bowl. Enjoy!
